What you Get

Our lambs are processed at 120-125 pounds live weight, yielding approximately 50-55 pounds of packaged meat for your freezer. The exact weight and selection of cuts depend on your custom processing choices, but a standard breakdown typically includes:

  • 16 shoulder chops (or can be cut as whole or half shoulder roasts)
  • 16 small rib chops (2 per pack, or can be left as whole racks)
  • 16 small loin chops (4 per pack)
  • 2 foreshanks
  • 2 hindshanks
  • 2 packages of ribs (or can be cut into 16 rib chops)
  • 2 bone-in leg roasts (5-6 lbs each, commonly cut in half or into leg steaks)
  • 2-4 packages of meaty neck slices (great for stock or stew)
  • 10-12 lbs of ground lamb (1 lb packs)

All lambs are processed under USDA inspection, ensuring the highest quality and food safety standards. Each cut is individually vacuum-sealed and frozen for maximum freshness before delivery.
